Raclette: The Perfect Winter Dinner

After over a year of listening to my French-man say how much he missed eating Raclette during the winter, I finally went out and found a Raclette machine to gift him at Sur La Table. Though I’d had Raclette in Switzerland years ago, when we had our first Raclette dinner here in NYC, I was reminded just how perfect this meal is for winter, as well as for last minute dinner parties because it’s a meal your guests prepare themselves at the table—and have fun doing so.
A cheese originating in the Swiss canton of Valais, today Raclette is also produced in the French regions of Savoie and Franche-Comté. My personal favorite is the ultra-stinky Raclettes of Franche-Comté. Whole Foods always has Raclette, but I’ve also seen Raclette at many other quality markets, as well as on Fresh Direct (for you New Yorkers).
